POTATO CHORIZO MEXICAN BURRITO

Ingredients
  

  • 1 small potato
  • 4-6 flour tortillas depends on the size
  • 2-3 oz of chorizo
  • salsa to your taste optional

Instructions
 

  • In a small pot, add enough water to cover the diced potatoes. Bring to a boil over high heat and cook until the potatoes are tender, about 7 minutes. Drain and set aside.
    While the potatoes are boiling, heat the oil in a large skillet over medium heat. Remove the chorizo from its casing and crumble it into the skillet. Cook, stirring occasionally, until the chorizo is browned and fully cooked, about 2 minutes.
    Once the potatoes are cooked and drained, add them to the skillet with the cooked chorizo. Use a potato masher to gently smash the potatoes, mixing them with the chorizo.
    Season the mixture with salt and pepper to taste. If desired, add some salsa and stir to combine.
