Tlacoyos Mexican Food is a oval kind of shape, filled with usually beans. They are served with queso fresco (I have a great recipe to make it a home for so less) salsa, sourcream. This Tlacoyos Mexican food are very great for breakfast lunch and dinner.

Budget Ingredients and Substitutes

The key ingredient is masa harina, it cost less then $4 dollars and you can make so many of these Tlacoyos or many other recipes.

for this in particular, you do not need the tortilla pressure. You will only need your hands

Instructions

You need, masa harina salt and water to make the dough for this delicious Tlacoyos Mexican Food.

In a bowl we add the masa harina salt and water, mix it until you get a dough. Divide the dough in 8 to 10 pieces. Grab ! piece and you are going to do like a pool/boat type of thing.

If you are using can beans drain some of the liquid, then add it to a bowl and we are going to smash them. then grab your pool/boat and we are adding around 2tbsp of beans on the middle.

Close them grabbing both sides. take them to your pan or comal. Cook them for arounf 3-5 min per side, turn them the other way.

Cook the chorizo, add the onion. Then you are ready to assemble your tlacoyos. Add some chorizo and put it on top of your Tlacoyo with the rest of your toppings.

Hint: You can add some oil to your pan or comal so when you add your Tlacoyos dont stick to it.

Substitutions

This is a super friendly recipe, you can use any filling ingredients that you have at home.

  • Lettuce -You can add lettuce on top so you can add more veggies
  • Beans- add any leftovers that you have in your fridge.
  • Sourcream- you can use greek plain yogurt.

This is a Gluten free recipe, you can substitute in any way the queso fresco and the sourcream

Variations

If you are in my spicy team, then this variations are for you.

  • Spicy - add chili pepper flakes when cooking the chorizo to make it spicy.
  • Meat- cook some ground beef and filled with it.

Storage

This is a perfect freezer meal. Double the recipe and freeze some for later. This Tlacoyos Mexican Recipe IF you use can beans,you can keep them in the fridge 5 days. If you use leftovers then that will vary. Usually any leftover would be safe to eat from 4 to 6 days in the fridge.

Top tip

IS hard for me to give you an exact quantity of how much water you will use BECAUSE it will depends where you live(high altitude will need more water) and the weather will affect this as well. (Humid weather needs less water)etc.

But with this trick you can add the perfect quantity of water.If you dough when you are pressing down craks it needs more water.

FAQ

Can I freeze them?

Yes you can,put them in a cookie tray put them in the freezer for like 1 hr, then take them out and put them in a ziploc bag and back to the freezer.

For how long can I keep them in the freezer

in order to be so delicious I recommended 30 days.

Can I add something different then beans?

yes you can. any tye of meat, or any leftovers would be good for this recipe.

Ingredients
  

  • 2 cups masa harina
  • 1 teaspoon salt
  • 1 can beans use pinto beans or black beans
  • 2 cups water start adding less then that, you may not use all the water.
  • ½ cup diced onion
  • 6 oz chorizo
  • TOPPINGS
  • sourcream
  • salsa
  • limes
  • queso fresco

Instructions
 

  • In a bowl add the masa harina the salt and the water. Mix it to form a dough. Grab a little bit of the dough to taste it to see if it needs more water, Press it down if you see cracks, it needs more water, at a little bit at the time. Divide it on 8 pieces. Cover it and set aside.
    In a small plate add the can of beans(drain some of the liquid before )mash them.
    grab 1 ball press on the middle to create like a pool or boat, add around 2 tablespoon of beans and close it carefully grabbing the sides and press it Kind of like empanada. Cook them in a pan or comal for around 3 minutes or until you see that is cooked,turn it to the other side and cook it.
    In a pan add your chorizo and cook it for like 2 minutes, add the onion and cook it for another 2 minutes. Turn it off. Ready to serve on top of the tlacoyos.
    Grab some add them to a plate add some chorizo on top queso fresco sour cream lime and salsa and enjoy it.

Have a small bowl of extra water so you can moist your hands while working with the masa harina.

    I made these last week, tasty but a little dry. I didn't make have any salsa, so we just sprinkled them with cheese on top. The masa dough broke a few times as I tried to close it up over the beans, but I think that'll come with practice. It's a great pantry meal, and so cheap! Thanks!
