POTATO CHORIZO MEXICAN BURRITO

- 1 small potato
- 4-6 flour tortillas depends on the size
- 2-3 oz of chorizo
- salsa to your taste optional
In a small pot, add enough water to cover the diced potatoes. Bring to a boil over high heat and cook until the potatoes are tender, about 7 minutes. Drain and set aside.While the potatoes are boiling, heat the oil in a large skillet over medium heat. Remove the chorizo from its casing and crumble it into the skillet. Cook, stirring occasionally, until the chorizo is browned and fully cooked, about 2 minutes.Once the potatoes are cooked and drained, add them to the skillet with the cooked chorizo. Use a potato masher to gently smash the potatoes, mixing them with the chorizo.Season the mixture with salt and pepper to taste. If desired, add some salsa and stir to combine.make some burritos and enjoy.
