This yummy quick and very frugal enfrijoladas are going to be your go to quick meal. This can be for breakfast,lunch and dinner.

This recipe is great all year long.
How many times you are on the middle of the week and notice that you don’t have food or you are on a tight budget? or even worse you come home late, and you forgot to put the meat out? no worries any more this enfrijoladas are going to save you.

Budget Ingredients and Substitutes
For this recipe, the ingredients are so simple, that I am pretty sure you have them already at home.

- beans
- corn tortillas
- cheese
- chicken (optional)
- sour cream (optional)
- salsa(optional)

Instructions
On the substitutes I talk more about substitutions for beans, but the purpose is to have a little bit liquid my beans.

Add the beans with a little bit of milk(you can use water if you would like) until your beans are runny.Warm them up. (the beans need to be very hot so they can melt the cheese).

Once your beans are very hot, turn off the stove and warm your corn tortillas,

Grab 1 tortilla and pass it through the beans and cover the tortillas both sides with beans.

place them in your plate add some cheese on top and let it melt. You can add some sour cream and salsa if you like.
Hint: You can add some cumin powder to give a even better taste to your beans.
Substitutions
- Can beans: you can use can beans, rinse them and blend them with some milk until they are well blended. Add them to the pot and warm them up. Add more milk if they need to.
- Beans in a bag:You can add some beans in a bag, so easy and quick, for this method only add them to the pot and add some milk there and mix it so the beans can absorb the milk .Add as much as milk as need it.
- Refried beans on a can: Definelity you can use those beans, do it the same way as the beans in a bag.
Variations
This enfrijoladas are very versatile, if you want them for breakfast only with beans and cheese is fine. But if you want them for dinner then adding some shredded chicken will be perfect.You could even add some ground beef as well. Or any leftover that you have for that matter.
Another variation is adding some cooked chorizo on top of the enfrijoladas, to give a different taste. Add as much or less as you desire.
Equipment
To make this enfrijoladas, you only need a pan.

Storage
You can keep the beans inside the fridge from 3 to 5 days maximum. You can make the enfrijoladas en keep them inside the fridge, the tortillas are going to be very yucky.
The beans freeze perfectly, you can keep them up to 3 months.
Top tip
Is very important that your beans are very runny. So they are easy to stick on both sides of the tortilla.

Ingredients

- 1 lb beans black or pintos you can cook more then 1 lb
- ½ medium onion to cook the beans
- 2 cloves garlic to cook the beans
- salt to cook the beans
- chorizo optional no need to but it gives a lot of flavor
- ½ tablespoon cumin you can add more or less
Instructions
- cook your beans, In a pot add your beans, water, onion, garlic and salt. (you can cook your beans on the instant pot for 30-35 minutes, slow cooker for 10-12 hrs on low or on the stove top for around 1 hr or so.
- Once your beans are cooked. blend the beans with some of the water. Blended well they need to be runny .
- In a big pan add some of the chorizo to cook if you are going to use it, you don't need it but it gives a lot of flavor to the beans. Cook it for 3 minutes or so.
- Add the beans that you blended add the cumin and mix well, let it boil for 2-3 minutes. Turn off the stove.
- Warm your tortillas and you will introduce your tortilla to cover it with beans both sides, do this step fast so you don't burn your fingers. Put in on your plate like a taco. add some cheese right away so it can melt, Done.
- If you want to go to another level, add some sour cream and salsa, You can add some shredded chicken to make it more as a main dish. ENJOY.
