This recipe is perfect all year around, everytime you have some leftover rice and a little of chicken. I love to do this cupcake chicken with rice every time I buy a rotissere chicken, I can get 3 recipes meals from 1 chicken.

I love to use Rotisserie chicken for this recipe because it helps to make a quick and easy meal. You can use any type of cheese, you only need a cheese that melt.
And the rice is perfect using a leftover rice.

You need a muffin tin for this recipe.
Instructions
This cupcake chicken with rice is one of the most easiest recipe ever. You just mix everything bake them and done.


Grease very well the muffins tins, and even on the outside so they dont get stuck there. Add your mixture you get around 12 to 15 muffins.

Preheat your oven at 350F. Once we finish to add all of our mixture to the muffins, we are going to cover them with aluminium foil so the rice wont dry and be so hard when eat it.
Cook them for 15 to 20 minutes. Follow the recipe for more details.

Once they are out of the oven, let them rest for 5 minutes on the muffins tins. Then, carefully remove them using a knife and add some sour cream salsa if you desire too.
Hint: You can make a mixture of FLour,Oil and Shortening same quantity . Mix it up and use it to grease your muffins tins, they wont get stick to your pan.Use if for your cakes as well. Zlways work.

You can freeze the leftover rice for up to 1 month. You can freeze the chicken as well so you can have a quick dinner when needs it.
Top tip
You must cover the muffin tin before bake them with aluminium foilder other wise the rice will be very hard to eat.

Yes, it is important that you use the rice that is cold and preferebly 1 day or more old. If you use a warm rice it will be smushy, not good at all.
