Budget Ingredients and Substitutes
This recipe is very versatil, I did them with shredded chicken, but in reality you can use whatever you have on hand. Even leftovers.

- shredded chicken
- tomatoes
- onion
- garlic
- cheese
- chipotle in a jar

Instructions

In a big bowl combine the masa harina,the all purpose flour,the salt and the baking powder. once you mix it we are going to add the water.

add the tomatoes,garlic and the piece of onion together with the chipotle and a ¼ of a cup of water to the blender. blend it well.

In a small pot or pan,we are going to add somoe oil,then the onions previosly sliced, then the mixture that we blended. Cook it for 6 min in low heat.Move it while cooking.

Once our liquid mixture reduced, add the shredded chicken and mix it. Cook it for 2 minutes, in low heat.

Hint: If you don't have a tortilla pressure, no worries, you can use aplate, put a piece of palstic like a sandwich bag then a piece of dough, cover it with another piece of plastic, then put a plate on top and press down as hard as you can. Remove the plate, remove the plastic and you have the circle for your empanada.
Substitutions
You can use an air fryer if you have one.
- Oil - You can use avocado oil for a more healthy version.
- Shredded chicken- Use a Rotiserre chicken for a quick meal.
- Chicken - Use what you have, you can use ground chicken, or any leftovers that you have.
- All purpose flour- use a gluten free flour to make it gluten free
Variations
- Spicy - If you don't like to be spicy omit the chipotle, you want it more spicy? add more chipotle sauce.
- Filling: this empanadas are perfect for you to use any leftovers that you have on hand.
Storage/ freezer meal
The empanadas are good for a week inside the fridge.
But this is a perfect FREEZER MEAL, once you have done all the empanadas let them cool completely, then add them into a freezer bag and put them in the freezer, they keep great for a month.
How to reheat the fried empanadas?
the easy way to do it is using a toaster, or your oven as well, pre heat the oven to 350F add them to a cookie sheet cover them with aluminum foil and bake them until they are warm, 16 to 20 minutes or so.
If you use the toaster, directly from the freezer it needs more time so it gets a little burn on the edge, but other then that it great the to use the toaster.

Top tip
When you put the oil to heat put in in low so it won't burn your empanadas at the moment you add them to fry them.

- 1 M/L onion you will get ¼ of this onion to blend with the tomatoes
- 2 garlic cloves
- 1-2 tablespoon chipotle sauce no the entire chipotle, we are using the liquid
- salt and pepper
- 2 cups shredded chicken 1 lb of ground chicken you can use if you would like.
- oil to fry the empanadas
- 1 cup shredded cheese
- ½ tablespoon dried oregano
- shredded lettuce
- queso fresco
- sour cream
- limes
- salsa
Instructions
- In a bowl mix the masa harina, all purpose flour, salt and baking powder. Add water until we form a dough, grab a little bit of the dough and press it, if it doesnt show cracks your dough is gowod to go, if it shows cracks aroud add more water.set it aside, blend together : the tomatoes, garlic and the ¼ of onion together with the chipotle and a ¼ of cup of water, blend it until everything is well combine.sliced the rest of the onion finely.In a pan add some oil, add the onion and the mixture that we blend, add salt and pepper to taste. Cook it in low for around 8 minutes, mix it once in a while.Add the shredded chicken and mix it,cook it for 2 minutes. Turn it off . Lets start making the empanadas, you will get around 24 to 27 empanadas. Divide your dough, grab 1 ball put it between 2 pieces of plastic and press it down either with the tortilla pressure or with the back side of a plate.Remove 1 plastic, add some cheese then some of the filling and carefully using the other plastic the one that we have on the bottom of the empanada we are going to close the empanada and we are going to press all around.Remove from the bottom plastic and take it to the pan with the hot oil cook it for 2 minutes or until is golden brown turn it and cook it from the other side. once is cooked from both ways take it out. Do the same with the rest of the empanadas.If you are planning on freezing them, let them cool completely then add them to a ziploc bag.keep it in the freezer up to a month.
