Ingredients
  

  • 3 cups leftrover rice
  • 1 ½ cup shredded chicken you can use 1 chicken breast
  • 1 tbsp oil
  • 1 cup corn you can use any veggies
  • 1 ½ cup cheese use any cheese that melts
  • 3 eggs
  • salt and pepper if you need it

Instructions
 

  • In a big bowl add all the ingredients and mix it up very well.
    grease your muffin tin very well and add your mixture you will get around 12 to 15 muffins depends how you fill them up
    preheat the oven 375F
    once you add all the mixture to your muffin tin , cover them with aluminium foil. Bake them for 15 minutes.
    get them out of the oven, and let them rest for 5 minutes.
    After the 5 minutes, gently using a knife go around the muffin and get them out.
    You can add some sour cream and salsa if you would like.
