This gluten free tres leches cake recipe is to die for!!
its a very easy recipe, in order to make the cake, you only need 4 ingredients.
- eggs
- oil
- sugar
- gluten free pancake mix
this is all you will be needing for this cake.
you will also need 3 diferent leches:
- evaporated milk
- condensed milk
- media crema
what is media crema ?
Media creme is sour cream and evaporated milk,but the flavor is a little different.
WHERE CAN I FIND IT ?
any store in the US sales it.
you can look in 2 places:
in the international aisle or
find it where the cakes mixes, evaporated milk condensed milk are.
SUBSTITUTE FOR MEDIA CREMA?
If you cant find it, no worries.
you can substitute for evaporated milk. so instead of using 1 evaporated milk use 2.
FOR HOW LONG CAN I HAVE THE CAKE IN THE FRIDGE ?
if it last more then 1 day, they just covered with plastic wrap up to 1 week inside the fridge.

CAN THIS GLUTEN FREE TRES LECHES CAKE BE MADE IN ADVANCED ?
The cake yes, bake it, let it cool, then you can freeze it covering with plastic wrap. then the day that you are eating it get it out of the freezer like 2 hrs in advance and proceed to do the rest of the process.
DO I HAVE TO LET IT COOL COMPLETLY BEFORE ADDING THE MILK?
yes, and this step is very important, if you don’t do this step, it will turn out like a dense ,ugly cake that you wont be able to eat.
SHOULD IT BE SERVED COLD?
definitely this is a cold cake, ( either way works too )
WHAT OTHER TOPPINGS CAN I USE INSTEAD OF STRAWBERRIES?
you can leave it just with the whipping topping or you could add toasted coconut or sliced almonds

GLUTEN FREE TRES LECHES CAKE
Ingredients
- 5 eggs
- ¾ cup oil
- ½ cup white sugar
- 2 cups gluten free pancake mix it has to be made with gluten free all purpose flour pancake mix no almond flour
- 1 cup whipping cream
- ¼ cup white sugar or you can use powder sugar
- 1 can evaporated milk
- 1 can condensed milk
- 1 can media crema substitute for evaporated milk
- strawberies for decorations
Instructions
- Preheat the Oven
- - Preheat your oven to 350°F (175°C).
- 2Prepare the Cake Batter:
- - In a mixing bowl, combine the pancake mix, eggs, sugar, and oil. Mix well until smooth.
- 3.Bake the Cake:
- - Grease a 9x13-inch baking pan and pour the batter into it. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
- - Once baked, remove the cake from the oven and let it cool completely.
- Create Holes for Soaking:
- - Once the cake has cooled, use a fork to make small holes all over the surface.
- Prepare the Milk Mixture:
- - In a blender, combine the sweetened condensed milk, evaporated milk, and whole milk. Blend until smooth.
- Soak the Cake:
- - Carefully and slowly pour the milk mixture over the cooled cake, allowing it to absorb. Use a knife or spatula to gently separate the edges of the cake from the pan to help the milk soak in. Continue until all the milk mixture has been absorbed.
- Make the Whipped Cream:
- - In a small bowl, combine the heavy whipping cream and sugar. Whip until soft peaks form.
- Frost and Decorate:
- - Spread the whipped cream evenly over the top of the soaked cake. Decorate with fresh strawberries to your liking.
