The best sweet potato oatmeal you ever try. It is full of flavor and nutrients, and so simple to make. And the best part? Is that you can freeze it for later.

SWEET POTATO OATMEAL

To freeze it , just let it cool completely cut it in squares and fold it on either aluminum foil or plastic wrap and put it inside your freezer. You can keep them from up to 2 months.

SWEET POTATO OATMEAL

Ingredients
  

  • 2 cups oats. not instant
  • 1 teaspoon baking powder
  • 1 tsp cinnamon
  • ½ teaspoon salt
  • 2 cups milk you can use almond milk or any substitute
  • 1 cup cooked sweet potato smashed
  • ¼ cup sugar or honey
  • 1 tablespoon oil any type you have coconut oil, canola olive oil etc..
  • 1 teaspoon vanilla
  • FOR THE CRUST ON TOP
  • ⅓ cup walnuts or pecans chopped
  • 3 tablespoon oats
  • 1 tablespoon cold butter
  • ¼ cup sugar

Instructions
 

  • We preheat our oven to 375F 190C.
    In a container we add the dry ingredients,(the salt, the baking powder, the oats and the cinnamon) mix it . Add the rest of the ingredients and mix again
    In an grease 8x8 inch mold we add our mixture, set aside. In a small plate, mix ⅓ cup of chopped walnuts, ¼ cup of sugar and 1 tablespoon of butter and 3 tablespoon of oats and using your fingers you are going to brake the butter in small pieces and mix it with all the other ingredients.
    Sprinkle it on top of the mixture. to cover it completely.
    Bake it for 30 to 35 minutes.Do the toothpick test to see if it is fully cooked.We take it out and let it rest for around 5 to minutes and cut it in squares.
