CHORIZO BREAKFAST CASSEROLE

Ingredients
  

  • 4 oz chorizo
  • 3 handfulls of spinachs
  • ½ cup flour
  • ¼ teaspoon salt
  • ½` teaspoon baking powder
  • 1 egg
  • 3 tablespoon sour cream
  • 2 tablespoon water
  • ¼ of a small/ medium onion
  • ¾ cup shredded cheese
  • 4 tablespoon butter

Instructions
 

  • Sauté the Onion and Chorizo:In a skillet, heat a little oil over medium heat. Add the diced onion and chorizo. Cook for about 2 minutes, until the onion is softened and the chorizo is lightly browned.
    Cook the Spinach:In a separate pan, add the fresh spinach. Season with a pinch of salt and pepper. Sauté until wilted, about 2-3 minutes.
    Combine Ingredients:In a large bowl, mix together the sautéed chorizo and onion, cooked spinach, and the additional ingredients. Stir until well combined.
    Transfer to Baking Dish:Pour the mixture into an 8x8-inch baking dish, spreading it evenly.
    Bake:Preheat your oven to 375°F (190°C) and bake for 20 minutes, or until heated through.
    Let cool slightly before cutting it. Enjoy.
