The main ingredient for this Mexican Chicken Salad Recipe Tostadas is 1 rotisserie Chicken, I can get from 3 to 4 meals for 1 chicken for a family of 4 -5. The cost is around $5 to $7dollars per chicken. And you just need a few ingredients and vaula dinner ready.

- Limes (juice only)
- white distilled vinegar
- extra virgin olive oil
- whole dried oregano
- salt
- rotisserie chicken or any shredded chicken for that matter.
- lettuce
- tomato
- cilantro
- onion

Instructions
For this Tostadas, is basically mix up all the ingredients, I love to add avocado to my salpicon, but is not a necesary, add it when is on sale.
The dressing/viangrette that we make is so easy,quick and delicious.

Add the ingredients for the lime vinaigrette in a small bowl.Whisk to combine.

In another container Add the ingredients for the chicken salad, but not the avocado.

Pour the lime vinaigrette on top,mix well to combine.

Keep refrigerated until ready to serve. Once you are ready, grab 1 tostada,add some chicken salad, top with slices of avocado.
Hint: The best way to have dinner at the table in less then 15 minutes is using a rotisserie chicken, removed all the chicken pieces at the moment while the chicken still warm. This will make it easier to shred the chicken.
Put it in ziploc bags and freeze it for another quick meal.
Could'nt get a rotisserie chicken? no problem, add 2 chicken breast to your instant pot if it is fresh just cook them for 8 min, is frozen? no problem, cook it for 12 minutes. Just add some water salt and pepper and cook it.

Substitutions
- Tomatoes - you could use a cup of cherry tomados cut in half instead.
- Chicken you could cook 2 chicken breast and shredded. or use 3 cups cooked shredded chicken.
- Don't use parsley as a substitute for the cilantro, they both are different flavors.
- Use tostadas gluten free to make this dinner safe for people with Celiac.
- Lettuce use any type of lettuce of your preference
Variations
Here are some ideas on how you can change this recipe to better suit your dinner guests.
- Spicy - Add diced chile jalapeño and mix it up with the rest of the ingredients.(You could remove the seeds if you would like).
- Crakers- Use craker instead of tostadas.
Storage
You can keep it in the fridge for up to 5 days but it may get watery because of the juice of the tomatoes, and if you add avocados they will dark as well.
I suggest that you try to eat it the same day or in the next day preferebly.
This recipe don't stand up well to freeze because of the lettuce and tomatoes
Top tip
Let it sit in the fridge for a while so the flavors can combine well.(at least 30minutes)
