Recipes for atole made with peanuts is a hot beverage that we drink on winter days but specially in December with the tamales.
This Mexican Atole in particular is not made with corn masa as the majority of the atoles.

Personally, I don't like the atoles made with corn masa. But a lot of people does. So thats why I create this recipes for atole with cornstarch insted.
SUBSTITUTE FOR THE PEANUTS?
The only substitute that I can think of will be pecans. It is very tasty.

HOW LONG IT WILL LAST IN THE FRIDGE?
If it last more then a day after you make it, you can keep it in the fridge for about a week.

Add some of the milk that you are going to need to the blender blend it together with the peanuts. Blend very well.

Add the rest of the milk, the sugar and the stick of cinnamon.
Heat it for around 3minutes, in low medium heat.

In small plate add the cornstarch with a little bit of milk mix it very well, After the milk is boiling, add it to the milk, mix it up.

Lower the heat to low. mix it up for around 5 to 7 minutes.
Chop the rest of the peanuts very finely. Serve the atole to your cup and add some peanuts, enjoy.

RECIPES FOR ATOLE.
Ingredients
- 1 ¼ cup of peanuts toasted and no salt
- 1 can evaporated milk
- 1 liter milk
- 1 cup sugar
- ¼ cup of cornstarch
- 1 tablespoon vanilla
- smallstick of cinnamon this is optional
Instructions
- - In a blender, combine 2 cups of milk and the peanuts (reserve ¼ cup of peanuts for later). Blend until smooth.
- - In a pan, add the remaining ¼ cup of milk, the stick of cinnamon, and sugar. Mix well and heat over low to medium heat for about 3-5 minutes.
- - In a small bowl, mix the cornstarch with a little bit of the milk from the pan until smooth. Reserve this mixture for later.
- - Once the milk in the pan starts to heat up and is about to boil, add the blended peanut mixture and the cornstarch mixture (make sure to stir the cornstarch mixture again before adding it).
- - Keep the heat low and stir for about 5-7 minutes, or until the mixture reaches your desired consistency.
- - Chop the reserved peanuts finely. Pour the atole into cups and top with the chopped peanuts if desired.
