- In a blender, combine 2 cups of milk and the peanuts (reserve ¼ cup of peanuts for later). Blend until smooth.
- In a pan, add the remaining ¼ cup of milk, the stick of cinnamon, and sugar. Mix well and heat over low to medium heat for about 3-5 minutes.
- In a small bowl, mix the cornstarch with a little bit of the milk from the pan until smooth. Reserve this mixture for later.
- Once the milk in the pan starts to heat up and is about to boil, add the blended peanut mixture and the cornstarch mixture (make sure to stir the cornstarch mixture again before adding it).
- Keep the heat low and stir for about 5-7 minutes, or until the mixture reaches your desired consistency.
- Chop the reserved peanuts finely. Pour the atole into cups and top with the chopped peanuts if desired.
