This ground beef empanadas are very easy, frugal and delicious to make. You only need a few ingredients to make them, you can fill them basically with anything that you would like.

You can see a thin layer of the ground beef fill with rice and cheese. We add to the beef some shredded carrots and zucchini to expand the ground beef.
Budget Ingredients :
- ½ zucchini
- carrot
- 6oz. ground beef
- salt and pepper
- bread crumbs
- leftover rice
- pieces of cheese
you get 4 big ground beef empanadas with this.

Instructions
This is a very easy meal to prep using ground beef.

shreds some veggies like carrots and zucchini.

add salt and pepper as well some bread crumbs with some egg, not all the egg or it will make it very watery and you will have a hard time shaping it to an empanada.

Grab some ground beef, and press it to make a circule, add some rice and cheese and close it.

Cook it in a pan with oil both sides.
Substitutions
- ground beef- You can use sausage if you don't have ground beef.
- Filling: use any leftovers that are not watery this is a perfect leftover use .(beans, cheese only etc..)

GROUND BEEF EMPANADAS.
Ingredients
- 6 oz ground beef
- 1 small carrot
- ½ zucchini
- ¼ cup bread crumbs
- salt and pepper
- 1 egg crack the egg in a small plate mix it and only add half of it.
Instructions
- Shred the carrot and zucchini.In a bowl, combine the shredded carrot, zucchini, salt, pepper, and breadcrumbs. Mix well.Crack the egg into a small bowl and whisk it. add half of it to the ground beef mixture and mix it again.Divide the ground beef into 4 equal portions and shape each portion into a flat circle.Take one beef circle and press it down to create a small disc.Place a scoop of cooked rice, and a little cheese in the center.Fold the beef over to create a half-moon shape, pressing the edges to seal.Heat a little oil in a pan over medium heat.Cook each empanada for about 4-5 minutes on each side, or until golden brown and cooked through.Enjoy your cheesy beef empanadas warm!
