This delicious Mexican rice with corn and sour cream it is one of my favorite Mexican side dishes. is so simple and quick to make, it.

This Mexican Rice with Corn and Sour Cream is a budget friendly recipe, it cost less than $2 dollars to make it for a family of 5. This is a Inspired recipe by my mom. A perfect side dish for any meal.

This rice is not only good for summer but also for any season, is just the perfect side dish.

Is very creamy. The combination of the sourcream and the corn is just perfect.

This sour cream rice is a perfect recipe to reheat because you may just have to add more sour cream and it is delicious again, not dry at all.

Ingredients

For this Mexican rice with corn recipe you only need 5 ingredients.

The chicken bouillon gives the perfect amount of seasoning to this side dish, no need to add anything else.

The prep time for this side dish is just less then 4 minutes.

  • white rice - You can use any grain rice of your preference.(log rice,etc) you can use brown rice as well. Just follow the instructions that they provide.
  • chicken bouillon - I prefer the granules ones because is easy to mix with the rice, the cubes sometimes it ended up like small pieces all over the rice.I highly recommed to use the granules over the stock just because the flavor is stronger.
  • sour cream - you could use greek yogurt instead, this is a mayor ingredient that you can not leave out.
  • corn - I like to use sweet corn for this recipe. You can use canned corn,fresh or frozen corn. if you are using fresh or frozen the equivalent of a can is 1 cup and ½.
  • butter - You can use either one: salted butter, unsalted butter or margarine. If you have none of these, you can use oil instead. I prefer olive oil to give a little more flavor.

Instructions

Add the butter to the pan,let it melt. add the rice cook it for 1 min.

Add the water, corn and the chicken bouillon and mix it.No need to add kosher salt at all or garlic for more flavor, the chicken bouillon covers it.

Incorporate the corn already drained and stir it. Once is boiling,lower the heat to low, cover the pan and cook it for 13 to 15 min.

Once the rice is cooked, add the sour cream and mix it. ready to eat.

Substitutions

  • you can use oil instead of butter
  • you could use greek yogurt instead of sour cream BUT the flavor will be a little different.
  • you can use any time of rice. just follow their instructions.
  • you can use brown rice instead. Just follow the instructions.

Equipment

To have success with cooking rice it is important that the pan that you use have a lid.

Metal pan is recommended.

Storage

Keep it in the fridge for up to 5 days. It is important to keep it in a container with a lid so the rice does not get dry.

Top tip

It so important that the rice is not over cook.

You will turn off the heat 2 minutes before is done, let it rest for 3 to 5 minutes and your rice is going to be just perfect.

Another important tip is once your rice is boiling, you need to put the heat  over medium low and cover it.

FAQs

whats the radio to make the rice?

For every cup of rice you use 2 cups of water, when using white rice. For brown rice follow the instructions that provide on the package.

Can I freeze it?

Yes you can. Up to 1 month preferable.

Can I use brown rice instead?

Yes you can, the brown rice requires long time to cook so just follow the intructions that they provide on your package.

How do I reheat the rice?

Preferably reheat the sour cream rice in the microwave. You could add a little more sour cream if is to dry.

Can I add some bell pepper?

I never done it but I dont see why not adding any bell peppers would not be good.

Ingredients
  

  • 1 ½ cup rice
  • 2 tablespoon chicken bouillon
  • 1 cup `sour cream
  • 1 can of corn no liquid
  • 3 cups of water

Instructions
 

  • add some oil or butter to a small pan, add the rice and cook it/mix it for 1minute.
  • Add the corn, water and chicken bouillon. mix it, once it comes to a boil reduce your heat to the lowest ,and put the lid on the pan, let it cook for about 13-15 minutes.
  • Once is cooked add the sour cream and mix it up very well.
