Vegetarian Taquitos

Ingredients
  

  • 4-6 tablespoon pico de gallo you can use any type of pico de gallo that is 1 or more days old.
  • ½ cup oats you can use either whole oats or quick oats
  • 12-15 pieces corn tortillas
  • mozarella cheese optional

Instructions
 

  • Warm the corn tortillas.
    Mix the pico de gallo and the oats and let it rest for 5 to 7 minutes. Is important to use all the liquid from the pico de gallo.
    Heat the pan with some oil, Once the oil is ready, start making the taquitos.
    grab a warm tortilla, add some of the mixture of the pico de gallo, add some cheese if you decided roll them and secure them with a toothpick.
    Make a few a the time so the tortilla doesn't brake while you are making the other taquitos.
    Once the taquitos are ready, get them out of the pan and put them on some paper towel to absorb some of the oil.
    To serve this tacos you can add some lettuce, sour cream salsa and lime.
