In a small pot add water to boil, once is boiling, turn it off. Clean the guajillo and ancho peppers (remove the tail and the seeds)add them to the hot water and let them there for like 10minutes.then, we are going to blend the chiles with the rest of the ingredients (not the lentisl) and we are going to add 1 ½ cup of water from the chiles to help us blend everything.In a pan add around 1-2 tablespoon of oil and add the lentils to dry, or to brown, I did this for 4 minutes in medium heat. After this, I add what we blended passing it through a colander. Mix it and cook it for 3 more minutes.And my barbacoa lentil tacos is ready. Warm up some tortillas (corn or flour) add some lentils and we like to add some onion and cilantro, lime juice and salsa. Enjoy it.
