Ingredients
  

  • ¼ of a medium onion
  • 2 guajillo peppers
  • 1 ½ cup beans
  • ½ cup chicken broth or water
  • ½ cup diced onion
  • 1 ½ cup shredded chicken
  • corn tortillas
  • salt and pepper
  • queso fresco if you would like
  • sour cream optional

Instructions
 

  • FOR THE BEANS SALSA OR SAUCE:
    In a saucepan with hot oil, sauté the onion until it is golden brown, add the guajillo peppers, the beans, and the chicken broth or water, and cook for 5 minutes, on medium low heat. blend and return to the heat. Season with salt and cook for 5 more minutes.
    In a frying pan with hot oil, sauté the onion, add the chicken. Season with salt and pepper and leave on the heat until golden.Place the corn tortilla and add the filling and roll, repeat until the filling is finished. In a frying pan with enough hot oil (this is optional, I like to do it with very little oil), fry the tacos, drain and set aside.
    Serve the tacos accompanied with sour cream, fresh cheese and salsa.
