This recipe was born on the need to use leftover pico de gallo and make it a main dish.

Budget Ingredients and Substitutes

To make this vegan taquitos you need easy and simply ingredients like:

VEGETARIAN TAQUITOS
  • corn tortillas
  • cilantro lime
  • cheese (dont use it if want it 100% vegan meal)
  • pico de gallo
  • oil

MIX THE OATS AND PICO DE GALLO

Mix the pico de gallo with the oats, and let it rest rest around 5 to 7 minutes.

MAKE THE  TAQUITOS

warm the corn tortillas, add some cheese to the tortilla and a tablespoon or so of the mixture.

Close the taquito using a toothpick, and fry them.

You can add some lettuce, sour cream, salsa lime and salt. Enjoy.

Substitutions

  • Flour tortillas : use them instead of corn tortillas
  • you can use whole oats or quick oats, same amount.

Storage

This vegetarian taquitos are better if you eat them the same day you made them. You can reheat them in the pan to warm them up.

You can have them up to 5 days in the fridge.

Top tip

To be succesfull with this vegetarian taquitos is a must that you let the pico de gallo rest at least for 1 day, so all the juice come out from the tomatoes, onion etc.

You need the liquid to hidrate the oats.

Ingredients
  

  • 4-6 tablespoon pico de gallo you can use any type of pico de gallo that is 1 or more days old.
  • ½ cup oats you can use either whole oats or quick oats
  • 12-15 pieces corn tortillas
  • mozarella cheese optional

Instructions
 

  • Warm the corn tortillas.
    Mix the pico de gallo and the oats and let it rest for 5 to 7 minutes. Is important to use all the liquid from the pico de gallo.
    Heat the pan with some oil, Once the oil is ready, start making the taquitos.
    grab a warm tortilla, add some of the mixture of the pico de gallo, add some cheese if you decided roll them and secure them with a toothpick.
    Make a few a the time so the tortilla doesn't brake while you are making the other taquitos.
    Once the taquitos are ready, get them out of the pan and put them on some paper towel to absorb some of the oil.
    To serve this tacos you can add some lettuce, sour cream salsa and lime.
