About

Hola, I’m Gaby! I’m the writer, recipe developer, and photographer behind Mexican Cooking on a Budget. As a Mexican-American Mom, frugal cook, time saver, and waste reducer, I’ve mastered the art of making more with less. This blog is where I share tips, tricks, and recipes to empower other moms to also make more with less and SAVE MONEY!

I live in Texas with my husband of and two kids. With a busy family that's always hungry, my food philosophy is EASY, APPROACHABLE, and YUMMY FOOD that doesn't break the bank!

Mom’s today are busy and need to save their money for many things for their family. Do you feel like you are making last minute dinners that cost too much? Do you buy expensive frozen dinners because they are easy to make? Do you order food at the last minute? I did all of these things and I was always feeling guilty!

Can you relate? Yes!

Then I’m here to help you COOK MORE while SAVING MONEY on meals with my DELICIOUS recipes for dinner, breakfast, and everything in between.

What you will get from this blog and recipes

I am so passionate about what I do that I will make this promise to you. I will always give you recipes, tips, guides, and other resources that deliver on these four pillars:

  1. I know, love, and cook Authentic Mexican Food. While some recipes may be non-traditional or new, they are always inspired by authentic Mexican cuisine.
  2. Budget-friendly recipes with simple ingredients that will save you money.
  3. Family recipes that are approachable & taste delicious. Nothing too fancy here! These are family-friendly foods. Some may seem complicated, but I can promise you that I will show you the simplest way to make them.
  4. Money-saving tips and guides within the recipes and in addition to the recipes. Some of my favorite ways to teach other home cooks to save money is through food storage, using leftovers, and cooking from the pantry.
