Budget Ingredients and Substitutes

To make Mexican gorditas food is so easy you only need all purpose flour, shortening, salt and hot water.

That's all you need.

  • All purpose flour
  • shortening
  • salt
  • hot water

See recipe card for quantities.

Equipment

You only need for this Mexican gorditas recipe a roller pin, Corn gorditas is different the all purpose flour gorditas, flour gorditas can not be made with a tortilla press, that is only for the corn tortillas o gorditas for that matter. Because flour gorditas is made with gluten if you use the tortilla press the tortilla or gordita will shrink instead of expanding.

Instructions

To make this gorditas, you will make the dough and let it rest for a few minutes to give time to the gluten to awake and do his job. After that you are going to form some balls with the dough, bigger than the normal balls that you do for a flour tortilla,(Like a lime size).

Form the dough following the directions on the recipe. Make balls the size of a lime. And start pressing down to create a circle smaller than the flour tortillas.

thickness of the dough for the gorditas.

You want them to be around ¼ inch. Cook them for around 30 sec each side.

open the gortida using a teeht knife.

Is important that you make the pocket when they are hot, it will be easier . Insert the knife very carefully. And go around only cutting like a third of the circle only NOT ALL AROUND.

Once you make the pocket it is ready to add any filling that you would like. Gorditas is a perfect to use with any leftovers.

You use the same recipe as the FLOUR TORTILLAS,honestly my recipe is an easy really good one check it out.

Hint: In order to succeed, it is important that you let the dough rest for at least 20 minutes. If you make the dough 1 day before is even better, so the gluten has the chance to basically wake up and do his job.

Substitutions

I will share with you a few great substitutes for this gorditas.

  • Oil - You can use any type of oil instead of the shortening, same quantity.
  • Butter - Butter gives an amazing flavor to the gorditas/tortillas, it is so good, so delicius, use same quantity, make sure that the butter that you use is soft. Do not use MARGARINE.

Equipment

The only equipment that you guys need is a roller pin an flour to dust your work area. preferably use a comal to cook your gorditas but any pan may work I HIGHLY recommend to read the flour tortillas recipes so you can check the tips and troubles that you can have and how to resolve it.

Storage

You can keep this gorditas inside the fridge for around 2 weeks or so. Outside the fridge around a week or so. Keep them inside a ziploc bag.

Top tip

Make the pocket of your gordita as soon as they are out of the pan, it will be very easy.Keep your gorditas warm until you use them.
