This delicious Potato Taquitos with chicken is so amazing, a perfect meal and a quick one as well. You need simple ingredients that you already have on hand Im pretty sure.

This is a perfect recipe all year long. I think that taquitos is always a perfect meal.

This was an inspiration looking for ways on how to use my delicious Refried beans, and just to make a simple meal to look a very fancy one.

Budget Ingredients and Substitutes

To make this Potato taquitos is so simple and easy, it uses ingredients that Im pretty sure you already have at home, I will share how I cook my beans on my instant pot.

Taquitos cooking Instructions

make the salsa

In a small pot we are going to add the salsa ingredients. Remove the center of the tomatoes and cut them in half, cut the piece of onion in small portions. Add the oil. cover the pot and take it to the stove cook it for 7 minutes on medium low heat.

diced the potatoes, cut the onion and shredded the chicken.

Diced the potatoes in small squares. Then slice the onion and finally shredded the chicken breast.

 cook the onions and potatoes with the chicken.

In a big pot, add some oil and then add the onions and the diced potatoes. Add some spices so the potato can absorb it. And cook them until the potatoes are soft. Add the shredded chicken and mix it up and cook it for 3 min.

warm tortillas, fill them fry them.

Warm the tortillas, fill them with the potato chicken mixture, close them using a toothpick and fry them.

Hint: It is important that in order for you to be able to freeze this potato taquitos for later, is important to use enough oil to cover completly the taquito.

Substitutions and variations:

Here are a few ideas and changes that you could make to the recipe.

  • Pinto Beans: use any type of beans (black, red etc.)
  • tomatoes: You can use tomatillos instead for a green salsa. (delicious as well)
  • The extras for the recipe: instead of adding lettuce you can use cabbage, you can add sourcream.

Storage

This chicken taquitos are good in the fridge for up to 8 days or so.

You can freeze them, just wait for them to be completely cold, add them to a ziploc bag and put them in your freezer. I recommed to eat them in 30 days or less.

Top tip

Do not overcook them so the taquitos are not so hard and brown that the flavor will be not so good.

Could I ommit the potatoes?

sure you can, it will make less tacos, I like to use the potatoes to stretch this meal.

Could I make this taquitos only with the potatoes?

of course you can. They will be delicious.

Can I use flour tortillas intead corn?

Yes you can.

Can I use tomatillos for the salsa instead roma tomatoes?

yes you can. The flavor will be so delicious.

Do I have to use pinto beans?

No, you dont have to, you can use black beans, kidney beans etc...

Ingredients
  

  • 35 corn tortillas
  • 2 medium potatoes
  • 2 medium onions you will need a ⅓ of 1 onion for the beans and ⅓ of an onion for the salsa. the other ⅓ save it on your fridge.
  • 1 chicken breast
  • 1 lb dried pinto beans
  • 2 cloves garlic
  • 5 roma tomatoes
  • ⅓ cup oil

Instructions
 

  • remove the center of each tomaotes and cut them in half, add them to a small pot plus the garlic, the oil and the onion slice. Put the lid to the pot and cook it on medium low heat for 7 minutes.
    slice the 1 medium onion, cut the potatoes in small cubes and cook and shredded the chicken.
    In a pot or big pan, we are going to add some oil, then we are adding the sliced onion and the diced potatoes and cook them until the potatoes are soft.Once the potatoes are cooked we are adding the shredded chicken mix it up and cook it for 3 minutes or so,
    then we are warming our corn tortillas, then we are going to fill each tortilla with some of the filling and we are closing the taco using a toothpic to secure,
    in a pan we add enough oil to cover the taquitos turn it on on low heat.
    We add the taquitos 4-5 at a time, once you see the taquitos that are light brown they are ready to get them out of the hot oil.
    In a colander we add some napkins so when we add the taquitos they can absorb the excess of the oil.
    SALSA
    after 7 minutes or so.We are going to blend it adding it 1 teaspoon of salt. The salsa is done
    BEANS
    I add the pound of beans the ⅓ of onion and 2 cloves of garlic and around a tablespoon or so of salt. We cooked them for 40 min on the instant pot. Once is done wait for the pressure to go down before we open the instant pot.
    Once you are able to open it, we are adding some of the beans and the liquid, together with the onion and the garlic and blend it very well.
    put some salsa on the center of your plate then add some beans on the center of the salsa then add some tacos on top of the beans.
    and if you like add some lettuce, queso fresco,salsa crema and yum yum, so good
